Apple and rhubarb crumble

Ingredients (serves 4)

  • 1 bunch (425g) rhubarb, cut into 2cm pieces

  • 3 Granny Smith apples, peeled, cored and sliced

  • 2 tablespoons caster sugar

  • finely grated rind and juice of 1 orange

  • 3/4 cup self-raising flour, sifted

  • 3/4 cup Berries or Apple Muesli

Banana cake recipe

Ingredients:

  • 125g butter, softened

  • 1 1/2 cup caster sugar

  • 2 eggs (60grams), beaten

  • 1 cup (approx. 2 large) ripe bananas, mashed

  • 5 drops vanilla

  • 250g plain flour

  • 1 teaspoon bi-carb soda

  • 1 teaspoon salt

Blueberry Muffins

Ingredients:

  • 410g (2 cups aprox) blueberries

  • 125g butter

  • 3 eggs

  • 140g brown sugar

  • 1 teaspoon vanilla essence

  • 150g sour cream

  • 350g plain flower

  • 1 teaspoon baking powder

  • Icing sugar, for dusting

Prawn cocktail

Ingredients:

  • 1 1/4 cup (375g) whole-egg mayonnaise

  • 1 1/2 tsp smoked paprika (pimenton) (see note), plus extra to sprinkle

  • 3 tsp lemon juice

  • 1 1/2 tsp smoked or regular sea salt (see note)

  • 32 cooked prawns (about 1kg), peeled

  • 2 avocados, cut into 1cm cubes

Mango, avocado and macadamia salad

Ingredients:

  • 1 ripe mango

  • 1 ripe avocado

  • Juice of 1 lime

  • 2 tbsp of olive oil

  • 1 garlic clove, crushed

  • 1 tsp wholegrain mustard

  • 1 long red chilli, deseeded and sliced

  • 100g rocket leaves

Ice-cream bomb

Ingredients:

  • 5g dried cranberries (Craisins)

  • 1/3 cup (80ml) orange juice

  • 500g mascarpone

  • 100g caster sugar

  • 300ml thickened cream

  • 2 slices candied orange peel, chopped into small pieces

  • 100g nougat, chopped into small pieces

Summer Dip

Ingredients:

  • 2 ripe avocados, halved, stones removed, peeled

  • 2 tsp fresh lime juice

  • 1 small red birdseye chilli, halved, deseeded, finely chopped

  • Salt & freshly ground black pepper

  • 1 x 300g ctn sour cream

  • 1 tbs taco seasoning
